Pancakes You will need: 1 2/3 Cups Pancake & Waffle Mix 1 Cup Milk 1 Egg 1. Heat skillet or griddle over medium-high heat or to 375°F. Grease with vegetable oil or shortening. (Surface is ready when drops of water jump around.) To measure mix, spoon into a dry measuring cup and level. 2. Stir Pancake & Waffle Mix, milk and egg with fork or wire whisk until smooth. Pour slightly less than 1/4 cup batter onto hot greased skillet for each pancake. 3. Cook until bubbles break on surface and edges just begin to dry. Turn; cook about 1 minute or until golden brown. 12 (4-inch) pancakes High Altitude (3500-6500 ft): No change. Waffles You will need: 1 2/3 Cup Pancake & Waffle Mix 1 1/3 Cups Milk 2 Tablespoons Vegetable Oil 1 Egg 1. Heat waffle maker. 2. Stir Pancake & Waffle Mix, milk, oil and egg with fork or wire whisk until smooth. Pour onto center of greased waffle maker. 3. Bake about 5 minutes or until steaming stops. Remove carefully. 12 (4-inch) waffles. High Altitude (3500-6500 ft): No change.

My favorite ever. I was used to eat a Japanese brand of Hotcakes (Hotokeku), because they are extra soft and fluffy, and this one was the only one after trying 8 different brands, that was similar to that. Super tasty! I recommend mixing the eggs 1st so you can get extra soft texture!
I should have read the ingredient list. Even though it says gluten free in the title. First ingredient wheat flour. The title doesn't match the listing.
So far one of the best pancake mixes I have found that is both organic AND dairy free. Add some pumpkin pie spice, bananas or any other delicious extract or flavor and you've got a special twist on an otherwise traditional tasting pancake.
