OMG, LOVE this stuff!!!!! I've made my own sauerkraut before, which itself is delicious, but, I gotta hand it to this company, because they NAILED it!!!! And the fine shreds, wow, that's a great, great way to do sauerkraut!!! When I first unpacked my shipment, I had to try some out of the jar because I was curious, and I was shocked that it's edible, tastewise, right out of the jar ---it's well aged and not very vinegary, which I think is THE BEST. I think sauerkraut will never go out of style in a million bazillion years, because it's so simple and so perfect, not to mention how healthy it is for us!!! Luckily, I haven't had a cold or flu in more than ten years, but, if I even got only one cold per year, ... sauerkraut would be my very first line of offense/defense against colds ---and other ---ailments. The overwhelming majority of our immune system is in our guts, so I highly recommend using sauerkraut for gut health!!! Let food be thy medicine!!!! At the end of the day, nothing manmade measures up to what the Creator gave us, and so to support that, is the very best that anyone can do, and sauerkraut is a required part of supporting our amazing biologies!!! This brand is so high quality that I would not pass it up!!!
