In the past, I had tried only black chia seeds. I used them to bulk up juices and I liked that they kept me fuller for longer periods of time. I didn’t even know white chia seeds existed until I stumbled upon them here at Amazon. I was pretty excited to try them because I thought they’d be more visually appealing to use in recipes other than juices. I’d always avoided trying to make chia pudding because the thought of little black dots in my food was off putting. I could choke them down in juices, but to actually look at them on a spoon? No way!
I received my white chia seeds last week and so far, have made 3 different batches of low carb chia pudding. I’m following a high fat, high protein, low carb diet due to diabetes. I use 1/2 cup heavy whipping cream, 1 and 1/2 cup unsweetened almond milk, 6 stevia packets, a splash of vanilla extract, and 1/3 to 1/2 cup chia seeds. I put it all in a mason jar and shake it well, then refrigerate overnight. I’ve also added in 1/3 cup frozen blueberries, or 1/3 cup frozen raspberries, or a couple scoops of chocolate low carb protein powder to change it up a bit. I love them! The texture reminds me of tapioca pudding, which I always liked. Chia seeds are said to be good in baking and as egg substitutes, but I’m really only interested in the pudding recipes right now. As a low carb vegetarian, my menu is pretty limited, so finding white chia seeds that I can make new foods with has been great.
I like that these seeds were very clean and I didn’t find any dirt or grit in the bag. I also like that they came in a sturdy, ziplock style bag so I can keep them fresh. I will definitely be ordering these again soon!
