Bought this sugar because the birthday cake recipe I chose for my son's birthday called for light brown sugar. I read muscovado sugar was true brown sugar and was great for baking, so I used this in place of the traditional grocery brand. First of all, the bag was much smaller than I expected, but I had plenty for my doubled recipe for a half a sheet cake.
Also, this stuff tastes delicious just on its own. It's a finer sugar than I expected (I think I was expecting it more like Sugar in the Raw, but it's not at all that coarse), and it was very easy to incorporate into the batter. Guests commented on how delicious the cake was, and I attribute at least part of this to the use of this great sugar. It gave a distinctly richer taste to what was otherwise essentially just a yellow cake with chocolate chips. I would definitely use this sugar again.
