Organic Coconut Palm Sugar

Wholesome! Organic Coconut Palm Sugar (also known as Organic Coconut Sugar) is a rich, unrefined brown sugar with a deep caramel flavor. It is produced by tapping the sweet nectar from the tropical coconut palm tree flower and drying the nutrient rich juice in a large open kettle drum. The juice condenses into a delicious, handmade whole brown sugar that adds warm color and a depth of flavor to baking. No chemicals, bone char, or animal by-products are used to make or de-colorize this sugar making it ideal for vegans too.

How It's Made

Our Organic Coconut Palm Sugar is hand made by small farmer cooperatives on the island of Java in Indonesia. Cooperative farmers climb high into the Coconut Palm trees to tap the coconut tree flower for its sweet nectar, similar to tapping a maple tree for syrup.

Sustainability

Wholesome Sweeteners is committed to sustainable organic agriculture. The coconut palm tree has been harvested for over 4,000 years. Unlike the production of palm oil (made from the Elaeisguineensis) which has received a negative image for causing damage to the natural environment through deforestation and habitat loss for endangered species, Organic Coconut Palm Sugar is produced on small, sustainable, cooperative owned farms.

Farmers harvest all year round and use every part of the coconut palm tree including the coconut fruit for meat and water as well as the fibrous husk of the coconut for twine or weaving material. Coconut Palm Trees (Cocosnucifera) are tapped for 25-40 years and use less water. Since the tree produces for so long they are not cut down after each harvest. Thank you for choosing Wholesome!

Good Caramel-Colored Sugar
I love this sugar. It does not have a coconut taste. I like how this sugar gives white cakes and vanilla puddings a pretty caramel color. I included a photo I took of a Tres Leches Cake I made with a vanilla-lemon pudding on top. The pudding has the coconut sugar in it (not the cake) which gave it the nice caramel color. It also has a very mild unique flavor, like a mild caramelized sugar taste. I use same amount of this sugar as I would a regular granulated sugar in recipes.

    taste. A coconut is the first "food" to grow on an island. It wasn't easy for the first monky to get at
    at first, but I believe after the 100th monkey DNA took over, then automatic for all monkeys to survive.

    I have used this coconut sugar to replace typical refined white sugar. I need to half what is typically called for in the recipe it is THAT sweet. If you are trying to keep baking a bit “healthier” but still want the full taste impact I would try this most definitely.

    I am still in a learning curve on this one.
    I had no idea what to expect when I ordered it - I only had read about this sugar having a
    lower glycemic impact than other sugars.

    The sugar itself is brown, and looks like a dark brown sugar.
    The taste is going to be one that you either love or hate... to me, it tastes a little like
    burnt brown sugar - like you have added a little butter but the sugar itself tried to burn.
    Now, I have to say that I like that flavor... I actually am one of the weirdos who likes the burned
    parts of foods - the crispy burnt edges of a meatloaf, the charred parts of a hot dog, etc etc.

    I have only tried to make one recipe with this so far - peanut butter cookies.
    I substituted coconut sugar for the brown sugar. The cookies came out much darker, and hard!
    Because this sugar is so dark, it changes the appearance of your food as it cooks. If you normally
    use your eye to know when your cookies are done, you won't be able to with this sugar. You have to use
    your timer and trust it. Then the cookies themselves were very hard and much drier, despite my
    using the same recipe I've used for years - the only change was the coconut sugar. So, I would advise
    that if you are going to use this for cookies, add a little fat and moisture from something else - either
    a couple extra tablespoons of butter or maybe 1/8 to 1/4 cup of applesauce to help keep your cookies
    from becoming dry bricks.

    Ironically, this sugar created an opposite reaction as the cookies got older. Normally, we don't have a problem
    with cookies getting old at our house! But no one really liked these. I did not throw them away, because I didn't
    mind them if I broke off a piece and let it sit in my mouth! Ha! (Like I said, I liked the burnt flavor aspect.)
    But here is what is weird - the longer the cookies sat, the SOFTER they got, the complete opposite of normal cookies!

    So, you could definitely try this. I wanted to for the lower glycemic index on this sugar. But, it is going to take some
    tweaking and adjusting to be able to use it for cooking.
